INSTANT POT CHICKEN AND GNOCCHI SOUP
FULL RECIPE
It’s a bowl full of creamy, savory flavor with onion, celery, carrots, shredded chicken, gnocchi, bacon, and spinach. I think gnocchi should always be in soup – it just belongs. The chicken and gnocchi would be just fine on their own but the bacon and garlic spinach really bring it all together at the end. INGREDIENTS
- 1 lb boneless skinless chicken breasts
- 2 cups mirepoix (chopped onion, celery, and carrots)
- 4 cups chicken broth
- 1 cup water
- 2 tsp dried basil
- 2 tsp Italian seasoning
- 1 tsp poultry seasoning
- 1 tsp salt
- 3 tbsp cornstarch dissolved in 2 tbsp water
- 2 12 oz cans evaported milk
- 2 packages gnocchi
- 6 slices bacon
- 3 garlic cloves, minced
- 5 oz fresh spinach
INSTRUCTIONS
- Place the chicken, broth, mirepoix, water, basil, Italian seasoning, poultry seasoning, and salt into Instant Pot
- Seal and cook on manual setting for 25 minutes
- Quick release then remove lid
- Shred the chicken then return it to the Instant Pot
- Change the Instant Pot over to the slow cooker setting
- Add the cornstarch/water mixture, evaporated milk, and gnocchi
- Stir, reseal the Instant Pot and cook for another 45-60 minutes until soup has thickened and the gnocchi has softened
- During this time, fry bacon in a pan
- Remove bacon from pan and let it dry on a plate with paper towels to soak up grease
- Drain the bacon grease until there is only a little bit left
- Saute the garlic and spinach in the pan and excess grease until the spinach is wilted
- Chop up the crispy bacon
- Once the soup is done, stir in the bacon and garlic spinach and enjoy!
