One-Bowl Sweet Potato Brownies

Super fudgy. Super delicious. Super easy to make and with a healthy dose of good-for-you sweet potatoes thrown into the mix, One-Bowl Sweet Potato Brownies are the perfect little treat. Mixed entirely in one bowl and made from nothing but real food ingredients,  you are going to be stunned that these bites of heaven are also Paleo, gluten free and dairy-free.


I want it to serve my body as much as it can.  For it to have as many nutrients in it as possible. This is my fuel after all! And I want to run my body to run on and to raise my family on amazing food that powers us up rather than weighing us down.

Take the sweet potatoes in this recipe. While they are a starchy vegetable, they a rich source of fiber as well as containing oodles of vitamins and minerals like iron, calcium, selenium. Sweet Potatoes are a good source of  B vitamins and vitamin C. And they are also high in beta-carotene.

ONE-BOWL SWEET POTATO BROWNIES {PALEO} RECIPE

INGREDIENTS:
  • 3/4 cup cooked and mashed sweet potato
  • 1/4 cup coconut oil, melted
  • 1/4 cup nut butter 
  • 1/4 cup honey/maple syrup
  • 2 eggs
  • 3/4 cup cacao powder
  • 1/4 cup coconut flour
  • 1 tsp vanilla
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup chocolate chips + extra for topping
INSTRUCTIONS
  1. Preheat your oven to 350℉ and line a square baking pan with parchment paper.  Set aside.
  2. In a medium bowl, combine all of the ingredients except the chocolate chips. Mix together using a spatula or wooden spoon until the batter is smooth and everything has been incorporated. 
  3. Let the batter sit for 5 minutes so that the coconut flour can absorb the wet ingredients.
  4. Fold in chocolate chips.
  5. Spread in lined pan, using the spoon or spatula to make sure that the batter is evenly distributed in the pan. 
  6. Sprinkle extra chocolate chips on top (optional).
  7. Bake for 30-35 minutes
  8. Let the brownies completely cool (about 1-2 hours) before slicing. The longer they cool, the more they will firm up. 
  9. Once sliced, enjoy one (of course) and then store leftovers in an airtight container in fridge or freezer!
